Grilled Caribbean Flank Steak

The smokey flavors from the grill blend naturally with the tropical flavors of the Caribbean. Marinated in fruit juice, the ginger and citrus flavors give this flank steak an abundance of flavor.

This steak goes quite well with Tropical fruit and rice. So sit back with an umbrella style drink and get ready to enjoy the flavors of the islands!



Ingredients
  • 1 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 1/4 cup orange marmalade
  • 2 garlic cloves, minced
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 1 teaspoon ground ginger
  • 1 flank steak 1-1/2 to 2 pounds
Directions
  1. Combine first 8 ingredients in a sauce pan.
  2. Simmer just long enough to melt the orange marmalade. Allow to cool, slightly.
  3. Place flank steak in a large resealable food storage bag and add marinade.
  4. Refrigerate overnight, turning bag over a few times.
  5. Prepare the grill for direct cooking over high heat (450 to 550-degrees F)
  6. Remove flank steak from storage bag and discard marinade.
  7. Place on grill and cook 6-7 minutes per side or until a meat thermometer reaches the desired doneness temperature.
  8. Remove steak from grill and allow to rest for 5 minutes.
  9. Slice the steak diagonally across the grain in thin slices.
  10. Serve with Tropical Fruit and Rice.
